Skillet Unstuffed Pepper Bowls – CE
cauliflower rice, salad and tortilla chips

Ingredients

Prep
  • 1 1/2 lb ground turkey or ground beef
  • 1 C frozen chopped onion
  • 2 C frozen chopped bell peppers
  • 2 t Worcestershire sauce
  • 2 t minced garlic
  • 1 t chili powder
  • 1/2 t cumin
  • 1/2 t onion powder
  • salt and pepper to taste
On Cooking Day
  • 1 T olive oil
  • 1 can diced tomatoes drained
  • 2 bag frozen cauliflower rice or brown or white rice
  • 1 C shredded Mexican-style cheese
  • 10 C salad greens
  • 1/4 C freshly chopped cilantro for serving
  • 1 bag baked tortilla chips

Instructions

To Assemble
  1. Add all ingredients to a large zipper bag. Zip to seal and squish to mix.
To Cook
  1. Heat olive oil in a large skillet over medium-high heat. Add turkey mixture. Sprinkle with a pinch of salt if desired. Cook, stirring occasionally until turkey is cooked, about 7-8minutes. Remove from skillet and set aside.
  2. Reduce heat to medium and stir in drained diced tomatoes. Continue to cook until heated through then reduce to a simmer for 10-15 minutes. Season with additional salt and pepper if desired.
  3. Meanwhile cook cauliflower rice according to package directions. To serve, add rice to a bottom of a bowl of plate. Top with pepper and turkey mixture mixture. Sprinkle with cheese. Garnish with chopped cilantro.
  4. Serve alongside a salad and tortilla chips for scooping or crushing on top.
