Sheet Pan Jalapeno Lime Chicken - CE

Ingredients

Prep
  • 1/4 C olive oil
  • 1 T fresh minced ginger
  • 1 T canned diced jalapeno pepper
  • 1 T lime zest
  • 2 t minced garlic
  • salt and pepper to taste
  • 1 lb baby red potatoes
  • 12 oz green beans
  • 1 C frozen chopped onion
  • 4 boneless chicken breasts
On Cooking Day
  • 2 T fresh chopped cilantro
  • 2 bag cauliflower rice

Instructions

To Assemble
  1. Combine the first 6 ingredients in a small bowl.
  2. Cut potatoes into bite sized pieces.
  3. Add the potatoes, green beans and onion to a zipper bag.
  4. Place the chicken in a separate zipper bag.
  5. Pour half of the olive oil mixture into each bag. Shake to coat well.
To Cook
  1. Add prepped vegetables and chicken to a sheet pan lined with aluminum foil and sprayed with non-stick spray.
  2. Bake at 425F for 25 minutes or until chicken is cooked through and vegetables are tender.
  3. Sprinkle with cilantro.
  4. Cook rice according to package directions.
