Ingredients
Prep
- 5 boneless chicken breasts
- 1 bell pepper any color
- 1 zucchini
- 1 yellow squash
- 2/3 C sun dried tomato salad dressing
- 1 T minced garlic
On Cooking Day
- 10 C salad greens
- 2 bag frozen brown rice steamers
Instructions
To Assemble
- Chop chicken and vegetables into bite size pieces and add to large zipper bag with remaining ingredients. Zip and shake to mix.
To Cook
- Discard any liquid and pour chicken mixture onto large baking sheet sprayed with non stick spray.
- Bake in a 400 degree oven for 20-25 minutes or until chicken is cooked through.
- Cook rice according to package directions. Serve with green salad.
