Ingredients
Prep
- 1 deli rotisserie chicken shredded - about 3 cups
- 3 zucchini
- 6 oz chicken stuffing mix
- 1/2 C butter
- 10 oz cream of chicken soup
- 1/2 C sour cream
- salt and pepper to taste
On Cooking Day
- 6 C salad greens
Instructions
To Assemble
- Cut zucchini into bite-sized pieces.
- In a large bowl, melt the butter and then mix with the box of chicken stuffing; set aside HALF of the mixture for topping the casserole later.
- Add the pulled chicken, zucchini, cream of mushroom soup and sour cream to the stuffing and mix well.
- Spread the mixture into a baking dish sprayed with non stick spray and then evenly sprinkle the top with the other half of the stuffing mixture. Cover.
To Cook
- Bake, uncovered, for 35-45 minutes or until it's warmed through and the top is golden brown.
- Serve with side salad.
