Ingredients
Prep
- 2 zucchini
- 2 pints cherry tomatoes
- 3 T olive oil
- 1 t minced garlic
- salt and pepper to taste
- 2 lbs large raw shrimp peeled, tail on ok, it adds flavor
- 2 T dried parsley
- 1 T lemon juice
- 1/2 C crumbled feta
On Cooking Day
- 2 bag frozen brown rice steamers
Instructions
To Assemble
- Chop zucchini into thin bite size pieces and add to 9 x 13 baking dish sprayed with non stick spray.
- Add next 8 ingredients to baking dish and toss with hands to mix. Cover with plastic wrap
To Cook
- Uncover and bake in oven at 450 degrees for 8-10 minutes or until shrimp are pink and cooked through.
- Cook rice according to package directions.
