Snap peas and rice

Ingredients

Prep
  • 1 1/2 lbs large raw shrimp peeled
  • 1 T olive oil
  • 1 T lemon juice
  • salt and pepper to taste
  • 1/4 C mayonnaise
  • 1/4 C sour cream
  • 1 T hot sauce
  • 1 t lemon juice
  • salt and pepper to taste
On Cooking Day
  • 16 oz frozen snap peas
  • 2 bag frozen rice steamer

Instructions

To Assemble
  1. Rinse shrimp if frozen and place in large zipper bag. Zip to seal.
  2. Mix next 3 ingredients in small container with lid. Reserve until ready to cook shrimp.
  3. Mix last 5 ingredients in small container with lid and cover.
To Cook
  1. Pour olive oil mixture over shrimp and mix around in zipper bag.
  2. Place shrimp on foil lined baking sheet sprayed with non stick spray and bake in 400 degree oven for 5 - 6 minutes or until shrimp is cooked and forms a 'C'.
  3. Cook rice and snap peas according to package directions.
