Ingredients
Prep
- 6 thick-cut boneless pork chops
- 1/4 C crumbled feta cheese
- 3 T basil pesto
- 1 T pine nuts
- 1 t oregano
- 2 t minced garlic
- 1/4 t crushed red pepper
- 1 T balsamic vinegar
- salt and pepper to taste
On Cooking Day
- 2 pkg frozen rice steamer
- 1 pgk dinner rolls
Instructions
To Assemble
- In a small bowl, combine feta cheese, pesto, and pine nuts.
- Slice chops almost in half horizontally. Place feta filling evenly inside each chop. Store in a glass baking dish sprayed with non stick spray.
- In another small bowl, combine remaining ingredients. Rub over each chop. Cover with foil.
To Cook
- Remove foil from baking dish and bake at 375 degrees for 45 minutes or until chops are cooked through.
- Cook rice according to package directions. Serve with rolls.
