Pesto Stuffed Pork Chops – C

Ingredients

Prep
  • 6 thick-cut boneless pork chops
  • 1/4 C crumbled feta cheese
  • 3 T basil pesto
  • 1 T pine nuts
  • 1 t oregano
  • 2 t minced garlic
  • 1/4 t crushed red pepper
  • 1 T balsamic vinegar
  • salt and pepper to taste
On Cooking Day
  • 2 pkg frozen rice steamer
  • 1 pgk dinner rolls

Instructions

To Assemble
  1. In a small bowl, combine feta cheese, pesto, and pine nuts.
  2. Slice chops almost in half horizontally. Place feta filling evenly inside each chop. Store in a glass baking dish sprayed with non stick spray.
  3. In another small bowl, combine remaining ingredients. Rub over each chop. Cover with foil.
To Cook
  1. Remove foil from baking dish and bake at 375 degrees for 45 minutes or until chops are cooked through.
  2. Cook rice according to package directions. Serve with rolls.
