Ingredients
Prep
- 1 1/2 lb large shrimp peeled
- 1/4 C pesto sauce
- 5 zucchini medium-large
- 1/4 C pesto sauce
On Cooking Day
- 1 pint cherry tomatoes
- 1/4 C shredded Parmesan cheese
- 10 C salad greens
Instructions
To Assemble
- Add shrimp and (first listed) pesto sauce to large zipper bag. Zip and shake to mix.
- Spiral zucchini into noodles and add to large zipper bag with remaining (second listed) pesto sauce. Zip and shake to mix.
To Cook
- Cook shrimp over medium/high heat in skillet until pink. Do not overcook. Remove from pan and add zucchini. Cook over high heat 2-3 minutes.
- Top with tomatoes and parmesan cheese.
- Serve with salad.
