Pesto Shrimp Zoodle Bowl – CE

Prep
  • 1 1/2 lb large shrimp peeled
  • 1/4 C pesto sauce
  • 5 zucchini medium-large
  • 1/4 C pesto sauce
On Cooking Day
  • 1 pint cherry tomatoes
  • 1/4 C shredded Parmesan cheese
  • 10 C salad greens

Instructions

To Assemble
  1. Add shrimp and (first listed) pesto sauce to large zipper bag. Zip and shake to mix.
  2. Spiral zucchini into noodles and add to large zipper bag with remaining (second listed) pesto sauce. Zip and shake to mix.
To Cook
  1. Cook shrimp over medium/high heat in skillet until pink. Do not overcook. Remove from pan and add zucchini. Cook over high heat 2-3 minutes.
  2. Top with tomatoes and parmesan cheese.
  3. Serve with salad.
