Ingredients
Prep
- 3 zucchini small
- 1 1/2 lb large shrimp peeled and deveined
- 1 pint cherry tomatoes
- 1/4 C pesto sauce
- 1/3 C Parmesan cheese
On Cooking Day
- 1 lb whole wheat spaghetti or zucchini noodles
- 8 C salad greens
- 1/2 C pesto sauce
Instructions
To Assemble
- Chop zucchini into small bite size pieces ad add to large zipper bag.
- Add next 4 ingredients to bag with zucchini. Zip to seal. Shake to mix.
To Cook
- Place shrimp mixture onto baking sheet and bake 400 degree oven for 10-15 minutes or until shrimp are cooked.
- Boil pasta according to package directions. Toss with pesto sauce (you may not need the full 1/2 cup. Only use enough to coat the noodles. Serve with shrimp and veggies.
- Serve with green salad.
