Pesto Shrimp with Pasta – CE

Ingredients

Prep
  • 3 zucchini small
  • 1 1/2 lb large shrimp peeled and deveined
  • 1 pint cherry tomatoes
  • 1/4 C pesto sauce
  • 1/3 C Parmesan cheese
On Cooking Day
  • 1 lb whole wheat spaghetti or zucchini noodles
  • 8 C salad greens
  • 1/2 C pesto sauce

Instructions

To Assemble
  1. Chop zucchini into small bite size pieces ad add to large zipper bag.
  2. Add next 4 ingredients to bag with zucchini. Zip to seal. Shake to mix.
To Cook
  1. Place shrimp mixture onto baking sheet and bake 400 degree oven for 10-15 minutes or until shrimp are cooked.
  2. Boil pasta according to package directions. Toss with pesto sauce (you may not need the full 1/2 cup. Only use enough to coat the noodles. Serve with shrimp and veggies.
  3. Serve with green salad.

**spiralize the zucchini into noodles (zoodles) and use instead of pasta if desired.
