Ingredients
Prep
- 1 french bread loaf unsliced
- 8 oz pesto sauce
- 8 oz goat cheese or ricotta
- 2 C shredded mozzarella cheese
- 3 C cooked shredded chicken deli rotisserie
- 1 pint cherry tomatoes
On Cooking Day
- 10 C salad greens
Instructions
To Assemble
- Slice french bread in half lengthwise and wrap in plastic wrap. Keep in refrigerator.
- Mix next 4 ingredients in a medium bowl with lid.
- Slice tomatoes and add to a small bowl with lid.
To Cook
- Unwrap french bread and spread chicken mixture equally over each half. Top with tomatoes.
- Bake in a 400 degree oven for 15-20 minutes or until bread is crisp and cheese is melted.
- Serve with green salad.
