Pesto Chicken Pizza – C

Ingredients

Prep
  • 1 french bread loaf unsliced
  • 8 oz pesto sauce
  • 8 oz goat cheese or ricotta
  • 2 C shredded mozzarella cheese
  • 3 C cooked shredded chicken deli rotisserie
  • 1 pint cherry tomatoes
On Cooking Day
  • 10 C salad greens

Instructions

To Assemble
  1. Slice french bread in half lengthwise and wrap in plastic wrap. Keep in refrigerator.
  2. Mix next 4 ingredients in a medium bowl with lid.
  3. Slice tomatoes and add to a small bowl with lid.
To Cook
  1. Unwrap french bread and spread chicken mixture equally over each half. Top with tomatoes.
  2. Bake in a 400 degree oven for 15-20 minutes or until bread is crisp and cheese is melted.
  3. Serve with green salad.
