Ingredients
Prep
- 4 sweet potatoes
- 2 T olive oil
- 1/2 C chopped pecans
- 1/4 C brown sugar
- 1/4 t cinnamon
- 3 T flour
- 3 T butter
On Cooking Day
- none
Instructions
To Assemble
- Slice sweet potatoes into 1/4 inch circles and add to large zipper bag with olive oil.
- Add remaining ingredients to a small bowl with lid.
To Cook
- Place sweet potato rounds on large baking sheet sprayed with non stick spray.
- Bake in a 400 degree oven for 20 minutes. Top with pecan mixture and bake until potatoes are tender and topping is caramelized.
