Ingredients
Prep
- 2 lb boneless chicken breast
- 14 oz can fire-roasted tomatoes
- 1/2 C frozen chopped onions
- 1 T minced garlic
- 1 T dried parsley flakes
- 1 t Italian seasoning
- salt and pepper to taste
- 1/4 t crushed red pepper flakes
On Cooking Day
- 3 C chicken broth
- 12 oz penne pasta
- 1 C heavy cream
- 2/3 C shredded mozzarella cheese
- 1/2 C shredded Parmesan cheese
- 10 C salad greens
- 6 slice Texas Toast
Instructions
To Assemble
- Cube chicken into bite size pieces and add to large zipper bag along with remaining ingredients. Zip to seal.
To Cook
- Pour chicken mixture and broth into slow cooker. Cook on low for 6-8 hours.
- Turn slow cooker to high, add pasta and both cheeses to the pot and stir well. Cook 20-30 minutes or until pasta is tender. Stir in cream before serving.
- Cook Texas Toast according to package directions.
- Serve with salad.
