Ingredients
Prep
- 6 boneless chicken breast
- 2 T taco seasoning
- 2 T olive oil
- 1/2 C BBQ sauce
- 2 T chili sauce
- 1 t cumin
- 1/2 stick butter
- 6 oz cream cheese
- 2 C sharp cheddar cheese
- 4 C frozen corn
- 1/4 C jalapeno slices more if desired
On Cooking Day
- 20 oz frozen green beans
Instructions
To Assemble
- Add chicken to a large zipper bag. Mix next 5 ingredients in a small bowl with lid. Pour half over chicken and reserve half for serving to use as a dip or drizzle over cooked chicken.
- Melt butter and mix with cream cheese using a hand mixer. Add cheese, corn and jalapeño slices (chop if desired) and mix well.
- Pour corn mixture into a baking dish sprayed with non stick spray. Cover with foil.
To Cook
- Bake corn casserole uncovered in a 375 degree oven for 30-40 minutes.
- Grill chicken on indoor or outdoor grill. Heat reserved bbq sauce in microwave until warm.
- Cook green beans according to package directions.
