Ingredients
Prep
- 6 boneless chicken breasts
- 1 C shredded mozarella cheese
- 6 T cream cheese
- 6 T basil pesto
- 3/4 C sun dried tomatoes
- 1 C fresh basil
- salt and pepper to taste
On Cooking Day
- 1 pkg couscous
Instructions
To Assemble
- Cut a horizontal slit through thickest portion of each breast to form a pocket.
- Rough chop basil and tomatoes. Combine mozzarella, cream cheese, pesto, tomatoes, and 3/4 C of basil in a bowl. Place remaining basil in a small bowl with lid.
- Stuff chicken with cheese mixture and sprinkle top with salt and pepper. Place in a dish with lid.
To Cook
- Place chicken in a 400 degree oven for 20- 25 minutes or until chicken is cooked through. Sprinkle with basil.
- Cook cous cous according to package directions.
