Mediterranean Stuffed Chicken- CE

Ingredients

Prep
  • 6 boneless chicken breasts
  • 1 C shredded mozarella cheese
  • 6 T cream cheese
  • 6 T basil pesto
  • 3/4 C sun dried tomatoes
  • 1 C fresh basil
  • salt and pepper to taste
On Cooking Day
  • 1 pkg couscous

Instructions

To Assemble
  1. Cut a horizontal slit through thickest portion of each breast to form a pocket.
  2. Rough chop basil and tomatoes. Combine mozzarella, cream cheese, pesto, tomatoes, and 3/4 C of basil in a bowl. Place remaining basil in a small bowl with lid.
  3. Stuff chicken with cheese mixture and sprinkle top with salt and pepper. Place in a dish with lid.
To Cook
  1. Place chicken in a 400 degree oven for 20- 25 minutes or until chicken is cooked through. Sprinkle with basil.
  2. Cook cous cous according to package directions.
