Ingredients
Prep
- 1 red bell pepper
- 1 yellow bell pepper
- 1 bunch asparagus
- 1 T minced garlic
- 1/2 C sun dried tomatoes in oil sliced
- 1 T dried basil
- 1/4 t crushed red pepper flakes
On Cooking Day
- 8 oz penne pasta
- 1 C grated Parmesan cheese
- 1 C half and half
- 10 C salad greens
Instructions
To Assemble
- Chop bell peppers and asparagus into bite size pieces and add to large zipper bag.
- Add next 4 ingredients to peppers and asparagus. Zip and shake to mix.
To Cook
- Pour pepper mixture onto baking sheet and bake in a 375 degree oven for 15-20 minutes.
- Boil pasta as directed. Toss with vegetable mix, parmesan cheese and half and half.
- Serve with salad.
