Meatless Hearty Pasta – CE

Ingredients

Prep
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 bunch asparagus
  • 1 T minced garlic
  • 1/2 C sun dried tomatoes in oil sliced
  • 1 T dried basil
  • 1/4 t crushed red pepper flakes
On Cooking Day
  • 8 oz penne pasta
  • 1 C grated Parmesan cheese
  • 1 C half and half
  • 10 C salad greens

Instructions

To Assemble
  1. Chop bell peppers and asparagus into bite size pieces and add to large zipper bag.
  2. Add next 4 ingredients to peppers and asparagus. Zip and shake to mix.
To Cook
  1. Pour pepper mixture onto baking sheet and bake in a 375 degree oven for 15-20 minutes.
  2. Boil pasta as directed. Toss with vegetable mix, parmesan cheese and half and half.
  3. Serve with salad.
