Mahi Mahi Fish Tacos - CE

Ingredients

Prep
  • 2 mangos or 1-2 cups frozen cubed mango, thawed
  • 6 mahi mahi fillets or any white fish, 4-6 oz each
  • 1 T olive oil
  • 1 T lime juice
  • 1/2 t ground cumin
  • 1/2 t garlic powder
  • 1/4 t chili powder
  • salt and pepper to taste
On Cooking Day
  • 12 corn tortillas or bibb lettuce
  • 2 C shredded cabbage slaw optional
  • 1 avocado
  • 1/3 C freshly chopped cilantro optional
  • 1 bag frozen brown rice steamers

Instructions

To Assemble
  1. Peel and chop mango. Place in a container with a lid.
  2. Place fish on a baking dish sprayed with non stick spray.
  3. Mix next 6 ingredients in a small bowl and brush over fish.
To Cook
  1. Bake uncovered in 425 degree oven for 15 minutes or until fish flakes easily with fork.
  2. Peel and slice avocado.
  3. Rough chop fish and serve in tortillas and top with cabbage slaw, sliced avocado, mango and cilantro.
  4. Cook rice according to package instructions.
