Ingredients
Prep
- 4 lb pork shoulder
- 1 C frozen chopped onions
- 16 oz green salsa mild
- 8 oz chopped green chiles
- 2 t ground cumin
- 1 t oregano
- 1/8 t ground cinnamon
- 1/4 C fresh cilantro
- 1 can black beans
On Cooking Day
- 2 bag frozen brown rice steamers
- 1/2 C sour cream optional
Instructions
To Assemble
- Place first 7 ingredients in large zipper bag. Zip to seal, squish to mix.
- Chop cilantro and add to small bowl with lid. Place beans in microwavable safe bowl with lid.
To Cook
- Place pork mixture in slow cooker on low for 6-7 hours
- Remove roast; cool slightly. Shred pork with two forks. Return pork to slow cooker; heat through. Stir in cilantro.
- Cook rice according to package directions. Heat beans in microwave. Serve pork over rice with beans on the side.
- Serve with sour cream if desired.
