Low and Slow Pork Verde – C
rice, black beans

Ingredients

Prep
  • 4 lb pork shoulder
  • 1 C frozen chopped onions
  • 16 oz green salsa mild
  • 8 oz chopped green chiles
  • 2 t ground cumin
  • 1 t oregano
  • 1/8 t ground cinnamon
  • 1/4 C fresh cilantro
  • 1 can black beans
On Cooking Day
  • 2 bag frozen brown rice steamers
  • 1/2 C sour cream optional

Instructions

To Assemble
  1. Place first 7 ingredients in large zipper bag. Zip to seal, squish to mix.
  2. Chop cilantro and add to small bowl with lid. Place beans in microwavable safe bowl with lid.
To Cook
  1. Place pork mixture in slow cooker on low for 6-7 hours
  2. Remove roast; cool slightly. Shred pork with two forks. Return pork to slow cooker; heat through. Stir in cilantro.
  3. Cook rice according to package directions. Heat beans in microwave. Serve pork over rice with beans on the side.
  4. Serve with sour cream if desired.
