Ingredients
Prep
- 2 boneless chicken breasts
- 1 lb smoked sausage
- 1 bag frozen chopped onions & peppers
- 2 t oregano
- 2 t Cajun seasoning
- 1/2 t dried thyme
On Cooking Day
- 28 oz can diced tomatoes
- 1 can chicken broth
- 1/2 lb large raw peeled shrimp
- 6 C salad greens
- 2 bag frozen rice steamer
Instructions
To Assemble
- Chop chicken and sausage into bite size pieces and add to large zipper bag.
- Add next 4 ingredients to chicken mixture. Zip to seal and squish around to mix
To Cook
- Add chicken/sausage mixture to slow cooker. Cook on low for 6 - 8 hours. Add ½ pound shrimp last 10 - 15 minutes of cook time watching to not overcook the shrimp.
- Cook rice according to package directions.
- Serve with salad, rice and Cajun hot sauce if desired.
