Green salad and rice
Servings:

Ingredients

Prep
  • 2 boneless chicken breasts
  • 1 lb smoked sausage
  • 1 bag frozen chopped onions & peppers
  • 2 t oregano
  • 2 t Cajun seasoning
  • 1/2 t dried thyme
On Cooking Day
  • 28 oz can diced tomatoes
  • 1 can chicken broth
  • 1/2 lb large raw peeled shrimp
  • 6 C salad greens
  • 2 bag frozen rice steamer

Instructions

To Assemble
  1. Chop chicken and sausage into bite size pieces and add to large zipper bag.
  2. Add next 4 ingredients to chicken mixture. Zip to seal and squish around to mix
To Cook
  1. Add chicken/sausage mixture to slow cooker. Cook on low for 6 – 8 hours. Add ½ pound shrimp last 10 – 15 minutes of cook time watching to not overcook the shrimp.
  2. Cook rice according to package directions.
  3. Serve with salad, rice and Cajun hot sauce if desired.
