Ingredients
Prep
- 1/4 C honey
- 1/4 C Dijon mustard
- 1/4 C olive oil
- 2 T lemon juice
- salt and pepper to taste
- 6 boneless chicken breast
- 1 cucumber
On Cooking Day
- 10 C salad greens
- 1 pint cherry tomatoes
- 1 C shredded carrots
Instructions
To Assemble
- Mix first 5 ingredients in a small bowl with lid.
- Add chicken to a large zipper bag along with a few spoon fulls of honey mustard mix. Zip and shake. Reserve remaining honey mustard for salad dressing.
- Slice cucumber and keep in a small zipper bag.
To Cook
- Grill chicken on indoor or outdoor grill or brown in skillet on stovetop.
- Serve over salad greens with tomatoes, carrots, cucumber and dressing.
