Best on day 1 or 2
Ingredients
Prep
- 6 english muffin
- 1 lb cooked ham steaks
- 1 bunch asparagus spears
- 9 sliced Swiss cheese
- 6 eggs
- 1/3 C sour cream
- 1 3/4 C milk
- 1/2 C frozen onion
- 2 T Dijon mustard
- salt and pepper to taste
On Cooking Day
- 6 C salad greens
Instructions
To Assemble
- Tear or cut english muffins into bite size pieces and place half of them in the bottom of a 9 x 13 baking dish sprayed with non stick spray.
- Cube ham and chop asparagus into 2 inch pieces and place on top of the english muffins. Add cheese slices. Top with remaining english muffins.
- In a large bowl, whisk together remaining ingredients. Pour egg mixture over ingredients in dish- making sure to moisten all bread. Cover.
To Cook
- Bake uncovered in 325 degree oven for 60-70 minutes.
- Serve with green salad.
