Ingredients

Prep
  • 1/4 C red wine vinegar
  • 1/4 C olive oil
  • 3 T lemon juice
  • 1 T minced garlic
  • 1 T dried parsley or fresh chopped
  • 1 t dried oregano
  • 1 t dried dill
  • salt and pepper to taste
  • 30 oz canned chickpeas
  • 1 bell pepper any color
  • 1 cucumber
  • 1 pint cherry tomatoes
  • 6 boneless chicken breasts
To Cook
  • 1 pkg dinner rolls

Instructions

To Assemble
  1. Mix first 8 ingredients in a small bowl. This will be your dressing and marinade.
  2. Rinse and drain chickpeas and add to large zipper bag.
  3. Chop bell pepper, cucumber and tomatoes and add to chickpeas in bag. Pour 1/2 dressing into bag. Zip and shake to mix.
  4. Add chicken breasts to another large zipper bag and pour in remaining dressing. Zip and shake to mix.
To Cook
  1. Grill chicken on indoor or outdoor grill or brown in skillet on stovetop.
  2. Serve with chickpea salad and dinner rolls.
