Salad

Ingredients

Prep
  • 1 small yellow onion
  • 6 boneless chicken breast
  • 1 T olive oil
  • 1/2 t dried thyme
  • 1/4 t garlic powder
  • salt and pepper to taste
On Cooking Day
  • 1/4 C olive oil
  • 2 t balsamic vinegar
  • 2 C beef broth
  • 2 T flour
  • 1/4 t dried thyme
  • salt and pepper to taste
  • 1 C shredded Swiss cheese
  • 10 C salad greens

Instructions

To Assemble
  1. Thinly slice onions. Place in a small container with lid.
  2. Cut chicken into bite size pieces and place in a large zipper bag. Add remaining ingredients. Zip and squish to mix.
To Cook
  1. Heat olive oil in skillet over medium heat. Add onions and cook until tender. Stir in balsamic vinegar. Remove and set aside.
  2. Add chicken to skillet and cook, then remove and set aside.
  3. Add broth to skillet, whisk in flour until thick, then add thyme and salt and pepper.
  4. Return chicken and onions to skillet. Add cheese to melt.
  5. Serve with a salad.
