Ingredients
Prep
- 1 lb ground beef browned
- 1/2 C frozen onions
- 1 C salsa
- 28 oz can mild enchilada sauce
- 2 C Mexican cheese blend
On Cooking Day
- 1 C Mexican cheese blend
- 12 oz tortilla chips
- 2 avocados
- 1 bag frozen corn
Instructions
To Assemble
- Mix all ingredients in large zipper bag and squish to mix well.
To Cook
- Break up the chips and place in the bottom on a casserole dish. Pour beef mixture on top of chips and combine well.
- Top with cheese and bake 50-60 minutes.
- Slice avocado and cook corn according to package directions.
