Easy Enchilada Casserole – C

Ingredients

Prep
  • 1 lb ground beef browned
  • 1/2 C frozen onions
  • 1 C salsa
  • 28 oz can mild enchilada sauce
  • 2 C Mexican cheese blend
On Cooking Day
  • 1 C Mexican cheese blend
  • 12 oz tortilla chips
  • 2 avocados
  • 1 bag frozen corn

Instructions

To Assemble
  1. Mix all ingredients in large zipper bag and squish to mix well.
To Cook
  1. Break up the chips and place in the bottom on a casserole dish. Pour beef mixture on top of chips and combine well.
  2. Top with cheese and bake 50-60 minutes.
  3. Slice avocado and cook corn according to package directions.
