Ingredients
Prep
- 4 C shredded cooked chicken
- 10 oz rotel tomatoes and green chilies drained
- 2 C shredded Mexican cheese blend
- 1 pkg taco seasoning
- 1 onion
- salt and pepper to taste
On Cooking Day
- 12 hard taco shells
- 1 C refried beans
- 1/4 C freshly chopped cilantro optional
- taco toppings (salsa, sour cream, guacamole, cheese)
- 2 pkg spanish rice
- 1 bag tortilla chips
- 2 C salsa
Instructions
To Assemble
- Add all ingredients to a large zipper bag. Zip to seal and shake to mix.
To Cook
- Thaw before cooking.
- Spread refried beans in the bottom of each shell. Top with chicken mixture. Place in a large baking dish.
- Bake at 350 degrees for 12-15 minutes until chicken is heated through.
- Top with cilantro and taco toppings before serving.
- Cook rice according to package directions.
- Serve with chips and salsa.
