Crispy Oven Baked Chicken Tacos - FF
Spanish rice, chips and salsa

Ingredients

Prep
  • 4 C shredded cooked chicken
  • 10 oz rotel tomatoes and green chilies drained
  • 2 C shredded Mexican cheese blend
  • 1 pkg taco seasoning
  • 1 onion
  • salt and pepper to taste
On Cooking Day
  • 12 hard taco shells
  • 1 C refried beans
  • 1/4 C freshly chopped cilantro optional
  • taco toppings (salsa, sour cream, guacamole, cheese)
  • 2 pkg spanish rice
  • 1 bag tortilla chips
  • 2 C salsa

Instructions

To Assemble
  1. Add all ingredients to a large zipper bag. Zip to seal and shake to mix.
To Cook
  1. Thaw before cooking.
  2. Spread refried beans in the bottom of each shell. Top with chicken mixture. Place in a large baking dish.
  3. Bake at 350 degrees for 12-15 minutes until chicken is heated through.
  4. Top with cilantro and taco toppings before serving.
  5. Cook rice according to package directions.
  6. Serve with chips and salsa.
