Ingredients
Prep
- 2 bell peppers
- 12 oz broccoli florets
- 1 1/2 T olive oil
- 6 chicken cutlets thin breasts
- 1 1/2 C roasted red pepper hummus
- 1 C Panko breadcrumbs
- 1 1/2 t oregano
- 1 1/2 t paprika
- 3/4 t cayenne pepper
- salt and pepper to taste
On Cooking Day
- 8 C salad greens
- 2 bag steamers brown rice
Instructions
To Assemble
- Slice bell peppers and add with broccoli to a (large enough to fit) baking dish sprayed with non stick spray. Drizzle with olive oil and sprinkle with garlic salt and pepper. Toss to mix well.
- Lay chicken on top of vegetables and spread hummus all over chicken.
- Mix last 5 ingredients in a small bowl and sprinkle over everything. Cover with foil.
To Cook
- Bake uncovered in a 400 degree oven for 25-35 minutes or until chicken is cooked through.
- Cook rice according to package directions and serve with salad.
