Ingredients

- 1 head cauliflower
- 1 baking potatoes
- 3/4 C frozen onion
- 2 t minced garlic
- salt and pepper to taste
On Cooking Day
- 3 C chicken broth
- 2 t lemon juice
- 1/2 C sharp shredded cheddar cheese
- 8 C salad greens
Instructions
To Assemble
- Cut cauliflower into 1" pieces. (about 4 cups) and add to large zipper bag. Chop potato and add to the bag with cauliflower. Add remaining ingredients to bag. Zip to seal and squish to mix.
To Cook
- Pour bag contents into slow cooker with broth and cook on low for 6-8 hours.
- Blend with immersion blender and stir in the lemon juice. Top with cheese to serve.
- Serve with salad.
