Ingredients
Prep
- 4 boneless chicken breasts or 6 thighs
- 1 C frozen mango chunks
- 1 1/2 t cumin
- 1 t dried oregano
- 1 T chipotle in adobo
- 1 C frozen chopped onion
- 1 T minced garlic
- 1 t salt
- 2 oz tomato paste
- 2 T lime juice
On Cooking Day
- 2 C chicken broth
- 12 lettuce leaves bib, romaine or butter
- 1 C frozen mango chunks
- 2 T cilantro fresh chopped
Instructions
To Assemble
- Add all ingredients to a large zipper bag. Zip and shake to mix.
To Cook
- Pour bag contents along with chicken broth into slow cooker and cook on low for 6-8 hours. Shred and scoop onto lettuce leaves.
- Chop mango into small bite size pieces and mix with cilantro and serve over chicken.
