Chipotle Mango Chicken Lettuce Wraps – MD

Ingredients

Prep
  • 4 boneless chicken breasts or 6 thighs
  • 1 C frozen mango chunks
  • 1 1/2 t cumin
  • 1 t dried oregano
  • 1 T chipotle in adobo
  • 1 C frozen chopped onion
  • 1 T minced garlic
  • 1 t salt
  • 2 oz tomato paste
  • 2 T lime juice
On Cooking Day
  • 2 C chicken broth
  • 12 lettuce leaves bib, romaine or butter
  • 1 C frozen mango chunks
  • 2 T cilantro fresh chopped

Instructions

To Assemble
  1. Add all ingredients to a large zipper bag. Zip and shake to mix.
To Cook
  1. Pour bag contents along with chicken broth into slow cooker and cook on low for 6-8 hours. Shred and scoop onto lettuce leaves.
  2. Chop mango into small bite size pieces and mix with cilantro and serve over chicken.
