Black beans, sliced avocado and green salad
Servings: 6

Ingredients

Prep
  • 6 tilapia fillets
  • 5 C cauliflower crumbles
  • 1 t olive oil
  • 2 t dried basil
  • 1/2 t dried marjoram
  • 1 T minced garlic
  • 2 tomato
On Cooking Day
  • 6 oz goat cheese
  • 6 C salad greens
  • 2 avocados

Instructions

To Assemble
  1. Chop tomato and store in small container with lid.
  2. Pour cauliflower crumbles into 9x13 baking dish and place tilapia filets on top.
  3. Combine last 4 ingredients in a small, and bowl pour over fish. Cover with foil.
To Cook
  1. Bake covered in a 400 degree oven for 15-20 minutes, or until fish flakes with a fork.
  2. Top fish with crumbled goat cheese and tomatoes.
  3. Slice avocado.
  4. Serve with dinner salad.

*best when served on day 1 or 2.

Omit tilapia and use 1 ½ lbs shrimp or 1 ½ lbs chicken tenders (will require longer cook time)
