Ingredients
Prep
- 8 oz frozen chopped spinach
- 6 chicken breast cutlets thin breasts
- 6 oz cream cheese
- 2 T minced garlic
- 1/2 t red pepper flakes
- salt and pepper to taste
- 2 C shredded mozarella cheese
On Cooking Day
- 2 bag frozen brown rice steamers
- 16 oz frozen mixed vegetables
Instructions
To Assemble
- Thaw and drain spinach and set aside.
- Place chicken cutlets in large baking dish sprayed with non stick spray.
- Spread cream cheese over chicken and sprinkle with next 3 ingredients.
- Top with spinach and mozzarella cheese. Cover with foil.
To Cook
- Bake chicken covered in a 400 degree oven for 30-40 minutes or until cooked through. Remove foil last 10 minutes of cook time to brown cheese.
- Cook rice according to package directions. Steam vegetables until desired doneness and season to taste.
