Cheesy Chicken Spinach Bake – CE

Ingredients

Prep
  • 8 oz frozen chopped spinach
  • 6 chicken breast cutlets thin breasts
  • 6 oz cream cheese
  • 2 T minced garlic
  • 1/2 t red pepper flakes
  • salt and pepper to taste
  • 2 C shredded mozarella cheese
On Cooking Day
  • 2 bag frozen brown rice steamers
  • 16 oz frozen mixed vegetables

Instructions

To Assemble
  1. Thaw and drain spinach and set aside.
  2. Place chicken cutlets in large baking dish sprayed with non stick spray.
  3. Spread cream cheese over chicken and sprinkle with next 3 ingredients.
  4. Top with spinach and mozzarella cheese. Cover with foil.
To Cook
  1. Bake chicken covered in a 400 degree oven for 30-40 minutes or until cooked through. Remove foil last 10 minutes of cook time to brown cheese.
  2. Cook rice according to package directions. Steam vegetables until desired doneness and season to taste.
