Ingredients
Prep
- 3 C deli rotisserie chicken shredded
- 2 C shredded cheddar jack cheese
- 1 C bacon bits or crumbled cooked bacon
- 1/4 C ranch dressing
- 12 flour tortillas
- 1 C shredded Monterrey jack cheese
On Cooking Day
- 15 oz green enchilada sauce
- 1 bag tortilla chips
- 1/2 C salsa for dipping
- 2 bag frozen rice steamers
Instructions
To Assemble
- Mix first 4 ingredients in a large bowl.
- Top each tortilla with mixture and roll up. Place in a baking dish sprayed with non stick spray.
- Sprinkle with Monterrey Jack cheese. Cover with foil.
To Cook
- Uncover. Pour enchilada sauce over enchiladas. Cover with foil.
- Bake covered with foil in 400 degree oven for 25-30 minutes.
- Cook rice according to package directions. Serve with chips and salsa.
