Ingredients
Prep
- 2 lb boneless chicken breast
- 4 celery rib
- 1 C frozen onion
- 1/2 C shredded carrots
- 1 C buffalo wing sauce
- salt and pepper to taste
On Cooking Day
- 1 pkg frozen corn
- blue cheese dressing
- 1/4 C shredded carrots
- 18 bibb lettuce leaves
Instructions
To Assemble
- Dice celery (save 1/4 cup for serving) and add to a large zipper bag. Add remaining ingredients to the bag. Zip to seal and squish to mix
To Cook
- Place chicken mixture in slow cooker for 7-8 hours. Shred chicken and mix.
- Scoop about 1/3 cup of chicken into each lettuce wrap, top with grated carrots, diced celery, and blue cheese over the chicken.
- Prepare corn according to package directions.
