Buffalo Chicken Lettuce Wraps - CE

Ingredients

Prep
  • 2 lb boneless chicken breast
  • 4 celery rib
  • 1 C frozen onion
  • 1/2 C shredded carrots
  • 1 C buffalo wing sauce
  • salt and pepper to taste
On Cooking Day
  • 1 pkg frozen corn
  • blue cheese dressing
  • 1/4 C shredded carrots
  • 18 bibb lettuce leaves

Instructions

To Assemble
  1. Dice celery (save 1/4 cup for serving) and add to a large zipper bag. Add remaining ingredients to the bag. Zip to seal and squish to mix
To Cook
  1. Place chicken mixture in slow cooker for 7-8 hours. Shred chicken and mix.
  2. Scoop about 1/3 cup of chicken into each lettuce wrap, top with grated carrots, diced celery, and blue cheese over the chicken.
  3. Prepare corn according to package directions.
