Ingredients
Prep
- 6 cod filets
- 2 bell peppers any color
- 2 zucchini medium
- 1/4 C pesto sauce
- 2 T white wine vinegar
On Cooking Day
- 1 bag frozen rice steamers
Instructions
To Assemble
- Cut cod, bell peppers and zucchini into bite size pieces. Add cod to a small bowl with lid and bell peppers and zucchini to a large zipper bag.
- Mix the pesto and white wine vinegar in a small bowl and pour equally over cod and vegetables. Mix to coat well.
To Cook
- Pour cod and vegetables onto a large baking sheet sprayed with non stick spray. Broil on high for 6-8 minutes or until fish flakes easily with a fork.
- Cook rice according to package directions.
