Broiled Pesto Fish and Veggies – OP1

Ingredients

Prep
  • 6 cod filets
  • 2 bell peppers any color
  • 2 zucchini medium
  • 1/4 C pesto sauce
  • 2 T white wine vinegar
On Cooking Day
  • 1 bag frozen rice steamers

Instructions

To Assemble
  1. Cut cod, bell peppers and zucchini into bite size pieces. Add cod to a small bowl with lid and bell peppers and zucchini to a large zipper bag.
  2. Mix the pesto and white wine vinegar in a small bowl and pour equally over cod and vegetables. Mix to coat well.
To Cook
  1. Pour cod and vegetables onto a large baking sheet sprayed with non stick spray. Broil on high for 6-8 minutes or until fish flakes easily with a fork.
  2. Cook rice according to package directions.
