Ingredients
Prep
- 12 flour tortillas soft taco size
- 3/4 lb deli sliced ham
- 1 1/2 C shredded cheddar cheese
- 1 1/2 C half and half
- 1 T flour
- 6 eggs
On Cooking Day
- 1/2 C shredded cheddar cheese
- 3 C grapes or any fresh fruit
Instructions
To Assemble
- Top each tortilla equally with ham and shredded cheese. Roll up and place in a large baking dish sprayed with non stick spray. Cover with foil.
- Add last 3 ingredients to blender. Cover and store in refrigerator.
To Cook
- Uncover enchiladas. Blend egg mixture and pour over top of enchiladas. Top with shredded cheese.
- Bake uncovered 375 degree oven for 40 minutes or until center is set.
- Serve with fruit.
