Breakfast Enchiladas

Ingredients

Prep
  • 12 flour tortillas soft taco size
  • 3/4 lb deli sliced ham
  • 1 1/2 C shredded cheddar cheese
  • 1 1/2 C half and half
  • 1 T flour
  • 6 eggs
On Cooking Day
  • 1/2 C shredded cheddar cheese
  • 3 C grapes or any fresh fruit

Instructions

To Assemble
  1. Top each tortilla equally with ham and shredded cheese. Roll up and place in a large baking dish sprayed with non stick spray. Cover with foil.
  2. Add last 3 ingredients to blender. Cover and store in refrigerator.
To Cook
  1. Uncover enchiladas. Blend egg mixture and pour over top of enchiladas. Top with shredded cheese.
  2. Bake uncovered 375 degree oven for 40 minutes or until center is set.
  3. Serve with fruit.
