Ingredients

Prep
  • 2 lb beef chuck roast
  • 1 onion
  • 2 T olive oil
  • 2 T lemon juice
  • 2 T minced garlic
  • 2 t oregano
  • 1 t garlic powder
  • salt and pepper to taste
On Cooking Day
  • 1/3 C beef broth
  • 6 pita bread
  • 1 C plain Greek yogurt or sour cream
  • 5 oz cherry tomatoes
  • 3 C salad greens
  • 1/4 C crumbled feta cheese optional

Instructions

To Assemble
  1. Cut onion into thin slices and add to large zipper bag with remaining ingredients.
To Cook
  1. Add beef bag ingredients and beef broth to Instant Pot.
  2. Pressure cook on high pressure for 25 minutes. Once done, let natural release for 15 minutes.
  3. Build gyros in pita bread with beef mixture, cherry tomatoes, lettuce, greek yogurt, and feta.

If freezing, assemble tzatziki sauce on cooking day. If meat is frozen, partially thaw meat by pressing saute (high) on IP and putting lid on for 5 minutes before cooking.
