Ingredients
Prep
- 3 green onions optional
- 4 C cooked shredded chicken deli rotisserie
- 2 C shredded cheddar jack cheese
- 3/4 C BBQ sauce
On Cooking Day
- 12 flour tortillas fajita size
- 1 jar salsa
- 1 bag tortilla chips
Instructions
To Assemble
- Chop green onions and add to large zipper bag with remaining ingredients.
- Thaw before cooking.
To Cook
- Equally scoop chicken mixture into each tortilla and fold in half like a taco.
- Place quesadillas on large baking sheet sprayed with non stick spray. Spray tops of quesadillas also. Bake at 400 degrees for 15 - 20 minutes or until cheese is melted.
- Serve with chips and salsa.
